Chaozhou big fish bolus

Material:

400 gram fish, 2 egg white, 15 gram monosodium glutamate, 20 gram refined salt, 600 gram bree, proper purple vegetable, sesame oil, pepper, cooked lard, fish dew.

Doing method:

Dry fish, scrape net fish with knife, and chop rib in fish, beat into fish powder with gavel, add egg white, refined salt and monosodium glutamate, pat into mucus with knife, can adhibit hand not drop, shove into 50 fish bolus with hand, put in water basin. Bolus with water pour in boiler, first cook with big fire, surface layer quick cooked, when water temperature near eight degree, change to medium fire till cooked and take out, bree in boiler, cook boil, put in fish bolus, cook till float, that is away furnace, add purple vegetable (first toast, bat away sand), monosodium glutamate, pepper, sesame oil, fish dew, lard, take out and put in soup boiler.

Characteristics:

White color, tender and tasty, fragrant.
