Crepe lotus powder

Material:

500 gram five-stripe pork, 250 lotus, 750 gram granular sugar, 500 gram lard (consume 100 gram), 5 gram sauce.

Doing method:Crepe lotus powder

Clean pork and put in boiled water boiler, cook about 40 minutes till soft with medium fire and take out, slay several pore on pigskin, mop with cloth, smear sauce to color up. Put thin bamboo strip in bottom, put in 400 gram boiled water, 450 gram granular sugar, cover and stew about 30 minutes and take out, row in bowl (skin downwards).
Put in lotus in boiler cook for 10 minutes, take out after get rid of core, in steam box till mashed, take out and put on chopping block, roll into lotus powder, add 250 gram sugar, 100 gram lard, in vessel cook with small fire till lard all absorbed by lotus powder, take out, buckle in soup dish, use 50 gram granular sugar, cook into sugar oil and pour on pork, that is.

Characteristics:

Skin appears winkle, tender and mellow, lotus powder sweet.
