Gold melon dasheen mash

Material:

500 gram unripe dasheen, 400 gram gold melon, 600 gram granulated sugar, 200 gram lard, 2 stripes of shallot.

500 gram unripe dasheen, 400 gram gold melon, 600 gram granular sugar, 200 gram lard, 2 unripe shallot.
Clean dasheen, braised till cooked, put on chopping block after peel off, planish with knife, roll into smash, till no granular. Unripe shallot with 200 gram lard fry in slow fire, fry to gold, pour oil into bowl, get rid of shallot. Put dasheen powder into boiler, add 100 gram water mix, then add 300 gram granular sugar, dasheen powder and granular sugar dissolve, after decoct about 10 minutes with slow fire, add lard use in fry shallot decoct again, till lard all absorbed by dasheen powder, become paste, take out wait for use.
Peel off gole melon, get rid of flesh Gold melon peel off, get rid of flesh, cut into block , 200 gram granular sugar pickle for 3 hours, put in braise cup, braised with slow fire, till sweet water become sugar oil. 100 gram granular sugar cook into oil wait for use.
Put braised gold melon in bowl, put dasheen powder on gold melon, after in steam box turn over into bowl, pour sugar oil, that is.
