Spring cake
Spring cake, as Chaouzhou famous traditional nosh, is evolved from Chaozhou ancient folk nosh. Before Qing dynasty, every street of Chaozhou prevailing a sort of nosh¡ªthin p ancake roll fry shrimp, that is using thin pancake piece roll fried shrimp and dipping with sweet jam. This kind of snack is mainly sold to children by peddler. By the end of Qing dynasty, stuffing of this snack changed from fry shrimp to radish smash and granular pork. By 1911, a brother named Rongshun Hu and Quanjiang Hu, founder of the famous store¡± Hu Rong Quan¡± in Chaozhou, on former base improved this food into Chaozhou spring cake which is come down until now.
Spring cake is wrap of round thin pancake piece (made of flour), which add some mung bean Pan (Chaozhou dialect, that is flay mung bean flake), white garlic (that is front white part of fresh garlic, chop into granule), fungus, shrimp and monosodium glutamateon it, its shape is about 10cm strip, shortly can eat when fry to gold.
Coat of spring cake crisp, stuffing salty savory, bite it, suddenly feel fragrant last, appetite increase, is a famous nosh not only Chaozhou people loves eating perennial but also every guest visits Chaozhou definitely degust.
